  • 1/3 cup granulated sugar
  • 3 large egg whites plus 3 large egg yolks
  • 1/8 teaspoon cream of tartar
  • 5 1/2 ounces bittersweet chocolate, melted
  • 2/3 cup whole milk
  • 1 tablespoon plus 1 1/2 teaspoons cornstarch
  • 1/8 teaspoon salt
  • 3 tablespoons creme fraiche
